I’m really not a fan of chocolate other than a good piece of chocolate candy or maybe the occasional glass of chocolate milk… or a really good chocolate chip cookie… or… never mind! (Lol) Anyway, my cousin asked me to bake cupcakes for her 30th birthday. For some reason I had an urge to bake chocolate cupcakes! I remembered that a few years ago I made chocolate cupcakes for her and her family, but I hadn’t really intended on using the same recipe. So what did I do? A quick Google search for “The best chocolate cupcake”! I wanted to make something chocolaty and moist (I hate dry cupcakes and cakes), yet light and airy. In case you didn’t know, the Farmer’s Market is like a huge playground for a foodie! There are so many cool foods – some that you may have never heard of – and they’re all right at your fingertips. I know I haven’t posted in a long while, but I thought that this is a great time to get back to it! Over the past several months I’ve completed a few personal goals! In March I signed the lease to my very own apartment and by the beginning of May I (drum roll) FINALLY got my license! There’s a great freedom that comes with having your own and doing for yourself. There’s also a great freedom that comes with knowing that you can do ANYTHING! In continuing with my personal goals, I’ve decided to get back on the healthy track. Have you ever used ground chicken instead of ground beef? I tried it a few years ago and fell in love! You can use it for anything: spaghetti with meat sauce, meatballs, and even a really good cheeseburger! Sometimes I use it for a salisbury steak effect. In those cases, I season the ground chicken, form it into patties and fry them up; but the truth is, sometimes they can get a tad dry. I hate dry food. Like… hate… in the deepest sense of the word. I have a confession to make. I’m a carb junkie and I’ve been eating too many fried foods as of late *hangs head in shame*. Have you ever eaten too many salty, fatty foods and been unable to get the taste out of your mouth? No? Just me? I recently had a craving for cornmeal pancakes but mind you, I don’t recall ever having had them in the first place. LOL So, what did I do? I Googled. I didn’t have any fresh corn as some recipes suggested, but I located a delicious recipe over at The Pioneer Woman! The interesting part of it all is that I recently chatted with my mom about having made these delicious eats and she said that she and my Grandma gave them to me as a little child. I was a pretty sickly kid, so everything with me was trial and error. I’ll go ahead and say that these cornmeal pancakes are definitely kid tested and mother approved!
