I love Mexican food. There’s something about cilantro, lime and tons of sour cream that sends me over the moon with excitement! *swoon* Check out this absolutely delicious and simple guacamole recipe that tastes even better the next day.
2 ripe avocados
1 jalapeño, diced
1 lime, juiced
1/4 c red onion,
finely sliced and diced
3-4 cloves of garlic, finely diced
1-2 tbsp cilantro
Salt and pepper to taste
Slice avocados open and scoop out the green goodness into a medium-sized bowl. Add lime juice, onion, garlic and
jalapeño. Combine all ingredients by mashing with the
back of a spoon – mix well, of course. Add salt and pepper
to taste and enjoy!
*Note: Place the avocado pits in your left over guacamole, as it helps the avocado stay fresh longer.
